  • We carefully select the coffees we roast, working closely with growers and suppliers to ensure we source only the highest quality beans.

  • Each coffee cherry is hand-picked to guarantee that only the ripest, best-quality fruit is harvested.

    • Sorting and Cleaning:
Cherries are sorted to remove defective fruit.

    • Drying:
Whole cherries are spread out and sun-dried on patios or raised beds, turned frequently to prevent spoilage. Drying can take several weeks depending on climate.

    • Hulling:

Once dried, the hardened outer layers (skin and fruit) are hulled away to reveal the beans inside.

  • We roast in small batches, made to order, allowing us to prioritize quality and deliver the freshest beans possible.

  • For the best flavour experience, we recommend allowing our coffee to rest in its sealed bag for at least 7 -14 days after the roast date. This resting period lets excess carbon dioxide naturally release, allowing the coffee’s aroma and nuanced flavours to fully develop.

  • We ship our coffee exclusively as whole beans—to preserve maximum freshness and deliver the fullest, most vibrant cup every time.
